What You'll Need:

For the sushi rice:

1 cup sushi rice

2 cups water

2 tablespoons rice vinegar

1 tablespoon sugar

1 teaspoon salt

For the filling:

2 large cucumbers

1 avocado, thinly sliced

1 carrot, cut into thin strips

1/2 red bell pepper, cut into thin strips

4 nori seaweed sheets

For serving (optional):

Soy sauce

Pickled ginger

Wasabi

Instructions:

1. Prepare the Sushi Rice:

Rinse the sushi rice under cold water until the water runs clear.

In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked and the water is absorbed.

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice while it's still warm. Set aside to cool.

2. Prepare the Fillings:

Peel the cucumbers and slice them in half lengthwise. Using a spoon, scoop out the seeds to create a hollow center. Slice the cucumber halves into thin strips.

Cut the avocado, carrot, and red bell pepper into thin strips.

3. Assemble the Sushi Rolls:

Place a bamboo sushi mat on a clean surface and cover it with plastic wrap. This will prevent the rice from sticking to the mat.

Lay a sheet of nori shiny side down on the plastic-covered mat.

With wet hands, spread a thin layer of sushi rice evenly over the nori, leaving about 1 inch of the nori uncovered at the top edge.

Arrange a few slices of cucumber, avocado, carrot, and bell pepper in a line across the center of the rice.

4. Roll the Sushi:

Lift the edge of the bamboo mat closest to you and begin rolling it away from you, using your fingers to hold the fillings in place.

Roll the sushi tightly, using the mat to shape it into a cylinder.

Once rolled, press gently to seal the edge of the nori.

Repeat the process with the remaining nori sheets and fillings.

5. Slice and Serve:

Using a sharp knife, slice each sushi roll into 6-8 pieces.

Arrange the slices on a serving platter and serve with soy sauce, pickled ginger, and wasabi if desired.
